When eating a carrot cake in the morning feels wayyy toooo indulgent, this carrot cake muffin does the trick with a lot less judgement. A tight little bundle filled with shredded carrots, walnuts and cream cheese, there is a lovely whiff of cinnamon and spice that reminds of fall.
