Mother's Day weekend

How was your Mother's Day weekend? We had our parents, grandmothers and siblings over for a huge meal to celebrate Mother's Day. It is not a day I harp about but I guess it is nice to do something for our mothers and grandmothers (four generations in the house, yo!). 

It has been a while since we had so many people over. I forget how tiring it is, but when the guests have gone and the house retired to its original condition, I do miss the preparation and hosting. 



I  love creating bouquets but I hardly find time or occasions for it. This occasion was a good excuse to indulge in frivolous highly perishable whims and fancies.

Salmon Caesar salad

This salmon Caesar salad was quite a hit and I will definitely make it again. It started of as an average smoked salmon Caesar salad and I decided to roast some salmon too so it became salmon two ways.  So fancy! The addition of honey roasted cashew nuts provided some sweet savoury crunch factor. 


Pork sausages + Pear, walnut and arugula salad

KW grilled up some sausages that were from Culina - they were yummy. We served them on a bed of pear, walnut and arugula salad dressed in a light lemon olive oil dressing. Our way of saying, let's practise some moderation. 


Ange hair pasta + portobello mushrooms + caramelised onions 

It's funny how I never thought much of angel hair pasta in the past but now I love making it. You don't feel overly heavy after ingesting more than your recommended portion. Portobello mushrooms and caramelised onions make for a winning combination. 



Indonesian Ribs xoxo

You can imagine how gleeful I was when KW decided to make his Indonesian ribs again. Ahhh, so so good... I had two satisfying slabs! I left the recipe for these ribs in the comments for some of you asked for it the last time round. Beware, it's long... for you masochistic grill fanatics.

Speaking of cake, my elder sister got this adorable cake from Awfully Chocolate, which we paired with lots of ice cream. 


Wishing all mothers (biological, foster & emotional) a joyful and fulfilling journey ahead! I think we all could afford to be less judgey of peoples' parenting style as kids are predictably unpredictable and there isn't a one-size-fits-all approach to them. Everyone is someone's "best mama in the world" =)

Indonesian Ribs Brine
1 bottle Apple juice
Sliced ginger
Lemongrass
1/4 cup salt
Black pepper
White pepper

Combine ingredients in a bag. Put ribs in bag and make sure the are coated with brine. Refrigerate for 2 days.

Indonesian Ribs Rub - use 1/4 cup instd of 1 tbsp for a 3 slabs of spare ribs.

2 tbsp coconut sugar or brown sugar
1 tbsp kosher salt
1 tbsp coriander power or seeds *
1 tbsp cumin
1 tbsp 5 spice blend
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp ground ginger *
1 tbsp paprika

Coat the spare ribs with mustard followed by the dry rub.

Set your grill for indirect heat. 3 hours on the grill, 2 hours foil (Texas clutch), after which reapply rub as necessary, coat on the BBQ sauce and place back 1 hour back on the grill.

Indonesian BBQ Sauce
1 cup Kecap Manis*
1/2 cup sugar
1 large shallot minced
2 cloves garlic minced*
1/4 teaspoon black pepper

Use a blowtorch as necessary to get even caramelisation of the BBQ sauce.

Remove from the grill and top with Thai basil or any other herb / board sauce, and serve.
